Nasama Resort is an oceanfront resort in Port Vila, Vanuatu, with 43 self-contained apartments and two popular onsite restaurants, Café Vila and Three Pigs. The venues cater to resort guests, locals, and expats, offering everything from gourmet breakfast and dinner to casual dining, cocktails, and events. We are an owner-operated business that values strong leadership, accountability, and managers who treat the venues as their own.

 

Job Desctiption:

• Oversee the overall performance and daily operations of Café Vila and Three Pigs
• Manage front and back of house teams across all service periods
• Lead, train, supervise, and motivate staff to maintain high standards
• Manage rosters, staffing levels, and labour efficiency
• Ensure consistent service, food quality, cleanliness, and presentation
• Control stock, ordering, costs, and wastage
• Implement and maintain operational systems, procedures, and checklists
• Work closely with Head Chefs on menu execution, specials, pricing, and events
• Monitor sales performance and identify opportunities to increase revenue
• Lead service on the floor and set the standard by example
• Handle guest feedback and resolve issues professionally
• Ensure compliance with health, safety, and licensing requirements
• Communicate regularly with ownership and provide operational reporting

 

Selection Criteria:

• Proven experience as a Food & Beverage Manager or in a senior hospitality management role
• Strong leadership skills with the ability to manage, train, and motivate teams
• Hands-on operator who is comfortable leading from the floor
• Solid understanding of food and beverage operations, cost control, and stock management
• Experience working closely with kitchen teams and managing multiple outlets
• Strong organisational and time management skills
• Ability to implement and maintain systems, procedures, and standards
• Excellent communication and problem-solving skills
• High level of accountability with a genuine sense of ownership
• Ability to perform under pressure in a busy, seasonal environment
• Flexibility to work evenings, weekends, and public holidays
• Experience in resort, remote, or island environments is highly regarded
