Job Desctiption:
Iririki Island Resort & Spa is seeking suitable candidates to appoint for the position of Commis Chefs to join our kitchen staff.
Reporting to the Executive Chef, the duties for this role will include but not necessarily limited to the following:
• Provide the highest and most efficient level of hospitality service to the hotel guests
• Works in the designated station as set by Executive Chef and/or Sous Chef
• Able to organise the assigned work area and efficiently put away orders
• Able to operate kitchen equipment like braising pan, baking ovens, stoves, grills, microwaves and fryers
• Able to produce quality product in a timely and efficient manner for the guests or staff
• Responsible to maintain cleanliness, sanitation at the assigned work area
• Responsible for preparing and cooking all food items by the recipe and to specification
• Prepare ingredients for cooking, including portioning, chopping, and storing food
• Cook food according to recipes, quality standards, presentation standards and food preparation checklist
• Prepares, seasons, and cooks a wide variety of meats, vegetables, soups, breakfast dishes and other food items
• Slice, grind and cooks meat and vegetables using a full range of cooking methods
• Have general knowledge of cooking temperatures, making soups & sauces, preparing entrees, vegetable preparation and a la carte cooking
• Set-up the station with par stocks of menu items, and prepare the dishes designated for that station
• Replenishes service line as needed and restock and prepare the workstation for the next shift
• Ensure that all products are stored properly in the correct location at the appropriate level at all times
• Communicate any assistance needed during busy periods and report any incidents to the Sous Chef to ensure optimum service to guests
• Minimise waste and maintain controls to attain forecasted food cost
• Assists other Team Members in the kitchen when needed or perform any other tasks assigned by the Executive Chef
Selection Criteria:
The successful candidate will have the following attributes:
• Previous experience in a similar role is essential
• Excellent understanding of various cooking methods, ingredients, equipment and procedures
• Able to work in a fast-paced environment with speed and quality
• Great personal hygiene and grooming standards
• Should be able to communicate, read and write clearly and effectively
• Diploma from a culinary school is a plus
• Flexibility to work in shifts, including weekends and evenings

Stock Controller - Outlets will be reporting to the Chief Financial Officer and to perform the following responsibilities;
• Plan and manage all hotel cost concern
• Organize the cost controlling system
• Organize the store and receiving system
• Manage F&B cost function
• Track record of all cost issues
• Maintain standard of all responsible areas
• Develop cost report to the Management
• Support cost information for all concern departments upon request
Daily:
• Verification of Revenue for Food and Beverage with F&B check
• Verification of price mentioned on F&B Check
• Control stock sheet for Food, Beverage per Outlet
• Preparing Daily Outlet sales analysis
• Monitor any discrepancies, if any take the appropriate measures. This will cover stores, F&B outlets and Kitchens
• Checking of outlet liquor stock book & verify the sale quantity
• Physical inventory to the outlets/stores
• Excess stock will be added in stock register & shortage will be debited to concern staff
• Round at F&B outlet & kitchen for observation purpose
Monthly:
• Verification of Revenue with account
• Month end Physical inventory of Store, Kitchen & Outlet for Food & Beverage
• Outlet wise Monthly Food & Beverage issue & closing entry
• Monthly Food & Beverage cost Report
• Analysis of Purchase & Consumption of Food &Beverage
Other:
• Recipe costing of Food & Beverage
• Menu pricing updating in System
• Newly required food & beverage menu item feeding in System
• Providing of information Sale Analysis, Revenue to F&B, Kitchen whenever they required
• Support to Material Dept & Account dept whenever they requires sorting any problem
Selection Criteria:
The successful candidates will have the following attributes:
- Minimum 2-3 years experience within a reputed hotel/resort
- Experience relevant to this class of work; or any equivalent combination of training and experience
This is a local position and open to Ni-Vanuatu applicants only.

Selection Criteria:
• Minimum 5 years' experience in an international hotel with island resort experience or equivalent
• Culinary school diploma or degree in food service management, BA, or related field equivalent
• Proven food and beverage management experience
• Experience of computer software programs (MS Office, restaurant management software, particularly RoomMaster, POS) essential.
• Ability to spot and resolve problems efficiently
• Communication and hands-on leadership skills
• Mastery in delegating multiple tasks
• Strong finance acumen with the ability to review P&L and manage forecasts/budgets
• Guest oriented and service minded
• Previous experience in integrated hotel/casino operations would be an advantage
