Job Desctiption:
Head waiter/Restaurant manager. Applicants must be able to do the following:
The position will have 2 stages
A) Head waiter
1) Organizing duties during service through different positions (runner, busboy, waitresses/ waiters)
2) Taking bookings throughout the day following organization and timing of seatings following times and Number of guests to optimizes number of guests served in the minimal timing, calculating kitchen timing as well so guest do not wait for their food to be served. .... but also making sure hotel guests on full pension are always included and inform about the opening of seatings time in a reasonable timely matter.
3) Explain wine, French, NZ, Australian (owner and supplier will give the basic information)
4) Being able to deal with special dietary restrictions for certain customers.
5) Make roaster on weekly base depending on booking, seasons, events coming up the following week,
6) Ensure cleanness of dining room, bar and surounding are up to standards.
7) Order and control stock on drinks, and all dining room needs, 9from napkins to fork and knives
8) Report to owner by email on a daily basis about service and food quality or any critics (positives and negatives) made by guests.
9) Make sure staff is well groomed and wear clean uniform,
B) restaurant manager
Once one employee is thought and proven to be independent in your Head Waiter position, you will have to fulfill the restaurant manager's position.
The Restaurant Manager acts as a true business leader. Their main duties include but is not limited too,Human Resources Management: Recruitment, training, team supervision, scheduling, and task distribution. Daily Operations Planning: Inventory management, supplier follow-up, client reception supervision, and coordination with the kitchen.
1) You should be able to handle and manage HR, including but not limited to hiring accordingly with the needs of the kitchen and front of the house staff. Keeping in mind that harmony of teamwork is what matters. With full knowledge of Vanuatu labor regulations
2) Being able to handle all recipes of the menu,
3) Control of cost, stock and turnover of goods in the kitchen,
4) Quality control of all goods, including meat up to the standards define by the owner,
5) You should be as knowledgeable or acquire knowledge of all meat at the same level as the owner.
6) Understand all technical issues (electrical, plumbing, grease treatment etc ...)
7) Public health general knowledge
8) Supervising of the head waiter, kitchen chef and staff,
For both positions you will have beside handling them, you will have to teach someone to be able to run that position
Selection Criteria:
10 years experience as a head waiter a must. 10yrs experience as a Restaurant manager is a bonus.
