- The ability to manage the day to day operations of a large international resort; Banqueting experience with large buffets & set menus; Good quality A la carte restaurant experience with menu planning &

costing; The ability to maintain food costs and achieve financial targets

- Experience with HACCP and food hygiene; Personnal & training qualification & experience; Communication & computer skills

- Knowledge of purchasing systems & stock control.
