Job Desctiption:

We are seeking to recruit for the above role which oversees the daily operations of the Resorts outlets and kitchens.  The role will be responsible for (working with HR) department recruitment aspects, training, ensuring high quality, cost-effective menus.                                                          The successful candidate will be required to perform the following responsibilities, amongst others:
• Provide overall leadership and direction for all kitchen operations, ensuring alignment with brand standards and hotel expectations.
• Communicate strategic priorities, daily objectives and operational changes to culinary leadership and kitchen teams.
• Identify situations that may compromise food quality, service standards, or guest satisfaction, and implement corrective actions promptly.
• Oversee daily food production, menu execution, and presentation across all outlets.
• Supervise inventory controls, ensuring accurate daily, weekly, and monthly inventories are conducted.
• Review and approve market lists, production plans, and requisitions to ensure operational efficiency and cost control.
• Ensure all kitchens are fully equipped and organized with the necessary tools, supplies and equipment to meet business demands.
• Work closely with Chief Steward to review equipment requirements, banquet operations, cleaning schedules, and health, safety, and sanitation compliance.
• Ensuring proper staffing levels, scheduling, and attendance control, review and validate reports of absences or lateness.

 

Selection Criteria:

The suitable candidate must possess minimum of 3-5 years' established experience in this role working at 5-star international hotels, preferably with the following attributes:
• Strong operational knowledge of multi-outlet kitchens and banquet operations.
• Proven experience in menu development, cost control, and culinary leadership.
• Excellent verbal and written communication skills.
• Strong leadership, organizational, and people-management abilities.
• Solid understanding of food cost control, budgeting, and inventory management.
• Ability to perform and analyze basic mathematical and financial calculations.
